Updates the test suite and centralized package versions to accommodate Mockolate v2 in the wrappers test project.

Changes:

• Bump Mockolate dependency from 1.5.4 to 2.0.2 in central package management.
• Update FileSystemTests to the new Mockolate v2 mocking/setup API surface.
